Cibrèo Culinary Academy training program is a unique, intensive and fully immersive course. You will live and work within the Venues of one of the most renowned Culinary Businesses in Florence and Italy

The course is composed of 2 modules.

With the first 10-week basic module, you will learn the fundamental cooking techniques and how to source and select the best quality ingredients.features professional training on: Homemade Pasta, gnocchi, Italian classics, Fish and sea food, Baking: bread, pizza, Introduction to pastry

 

By completing the 20-week program, you will reach a professional level, acquire advanced cooking skills and an essential managerial and entrepreneurial expertise. features everything included in the first part, plus: Nutritional, lactose free and vegan cuisines, Puff pastry; Phyllo dough, Mignon pastry, Breads from the world; international recipes and cuisines

Cibrèo was founded on September 8th 1979 following an intuition by Fabio Picchi, who chose this name in full harmony with its family tradition and with a real passion for the alchemy of Florentine cuisine.

In a constant shift between past and present, the city, the neighbourhood and the whole world,  Cibrèo has become the ideal setting for cultural discussion and social promotion. Cibrèo is not only a restaurant, it is also an eatery – Cibrèo Trattoria (the so-called Cibrèino), a coffee shop – Caffè Cibrèo, a cultural association – Teatro del Sale,  a Tuscan Oriental restaurant – Ciblèo and a grocery store, C.Bio.

You will be required to complete and present your Final Project.
The final work will be a complete and detailed project, including business plan, logo and a
defined brand strategy. Your
final project will be an original concept for a new format in culinary business, anywhere in the world.

The skills, vision and professional training acquired during the course give students the opportunity to start or enrich a career as Food & Beverage Entrepreneurs, Food & Beverage managers, consultants, Chefs, Food & Beverage Event managers.

The program will also inspire students who wish to become food artisans: farmers, wine makers, bakers and cheesemakers.

Each applicant will be interviewed by the school’s staff in order to verify language skills and motivations. First enrollment fee of €2500 is requested to move forward with the application process. To start the enrollment process, please fill out the contact form

 

Enrollment is limited to 12 students. There are no prerequisites. Personal motivation and vision will be the main aspects that will be taken into consideration and evaluated in order to be accepted into this program.

 

High school diploma; a high-intermediate level of English or Italian language sufficient to understand and to participate in lessons; 18 years of age at the time of application.

 

The school will support students in finding an accommodation during the length of the course. The costs of living are not included in the tuition fee.
