The Culinary Summer Course delivers the best introduction to the Italian and International cuisines, doing it from within the kitchen of a successful Culinary business.

The program takes place in Florence for a total duration of 4 weeks. Dive into the Made in Italy traditions while learning the most important cooking skills with professional chefs. It will be a summer to be remembered.

The course consists of 90 academic hours which will include practical cooking classes with a dedicated chef, visits to artisan food and wine producers, lectures and seminars.

 

You will rotate in all the Cibreo’s kitchens, working in the kitchen of a fine dining restaurant, of a trattoria, of a Bistrot, of a café, of a Tuscan oriental restaurant and much more.

Cooking skills are the focus and the heart of the course. You will learn how to make primi piatti (pasta, risotto and many others), secondi piatti, breads and desserts, only using seasonal ingredients.

On-field lessons are going to be part of the course, with visits to artisanal food producers who supply Cibrèo’s kitchens daily: cheesemakers, farmers and wineries in the Chianti Region, carefully selected by the brand.

Seminars and lectures on Italian gastronomy and industrial food production will complete the academic path.

Each applicant will be interviewed by the school’s staff in order to verify language skills and motivations. A pre-enrollment fee of €1000 is requested to move forward with the application process. To start the enrollment process, please fill out the contact form.

-> PARTICIPANTS

Enrollment is limited to 12 students. There are no prerequisites. Personal motivation and vision will be the main aspects that will be taken into consideration and evaluated in order to be accepted into this program.

-> REQUIREMENT

High school diploma; a high-intermediate level of English or Italian language sufficient to understand and to participate in lessons (corresponding to level TOEFL 450); 18 years of age at the time of application.

-> ATTENDANCE

Attendance is mandatory. Classes and workshops are held from Monday to Friday from 10.00 to 13.00 and from 14.00 to 17.00

-> INTAKES

Our summer programs last for the whole month of July.

-> HOUSING

The school will support students in finding an accommodation during the length of the course. The costs of living are not included in the tuition fee.
