Tradition & Creativity: Crafting New Culinary Concepts
Explore Italian cuisine through the lens of contemporary food culture in this 3-credit hands-on course, where cooking techniques, ingredient knowledge, and plate design meet creativity, research, and sensory experimentation.
The course approaches food as both craft practice and design discipline, set in the heart of Tuscany’s culinary tradition.
The Course
The program invites students to engage with food from two interconnected perspectives: the making, through foundational culinary technique and ingredient knowledge, and the designing, through creative research into composition, presentation, and the cultural languages of food. Both dimensions develop in parallel throughout the course.
Students learn to think through a dish from concept to plate, bringing intention to every element of the culinary experience.

Through hands-on kitchen sessions and creative exercises, they develop an approach that values process, material awareness, and sensory experimentation as much as technical skill.
Set in Florence, the course draws on a living culinary culture as its backdrop, encouraging students to explore Italian food traditions not as fixed references but as a living, evolving source of creative inspiration.

Final Project
The course concludes with the presentation of an original dish and a concise culinary design project, entirely conceived and developed by each student.
From initial research to final plate, participants document their creative process, combining cooking technique, ingredient knowledge, and visual composition to produce a proposition that reflects both their culinary sensibility and their understanding of food as a designed experience.
